Ripening is the process by which fruits attain their desirable flavour, quality, colour, palatable nature and other textural properties. It is a process in fruits that causes them to become more palatable. In general, fruit becomes sweeter, less green, and softer as it ripens. Even though the acidity of fruit increases as it ripens, the higher acidity level does not make the fruit seem tarter.

Retting is a process employing the action of micro-organisms and moisture on plants to dissolve or rot away much of the cellular tissues and pectins surrounding bast-fibre bundles, and so facilitating separation of the fibre from the stem.
