(d) Sucrose (cane sugar, beet sugar, saccharose) is a sugar comprising one molecule of glucose linked to a fructose molecule. It occurs widely in plants and is particularly abundant in sugar cane and sugar beet (15 - 20%), from which it is extracted and refined for table sugar. If heated to 200C, sucrose becomes caramel. Sucrose is broken down into the monosaccharides glucose and fructose with the help of carbohydrate digesting enzyme, invertase, produced in the small intestine (duodenum).
